Kitchen Knives
I've been using Chicago Cutlery for years. All my kitchen knives plus hunting knives. Easy to sharpen, hold a good edge for a reasonable time. I have butchered and boned out several Elk with then. Just keep a good stone handy and hit em a lick ever so often.
