Refinishing a Walnut stock
I would leave the original finish if you can. It will fill the grain and you can finish over it. Just tape off the checkering and spray it. Brownell's sells a really good oil finihs in an aresol can. Here is a link. I just used it to refinsh a CZ 22 hornet.
